"It’s funny how, in hindsight, ideas that once felt logical and coherent make you wonder, what the hell were we thinking? A rundown warehouse in the worst part of town. An 80-gallon still, cobbled together from salvaged parts by a hillbilly from Missouri. And the blind ambition that only comes from not knowing any better."
In 2013, three close friends set out to try their hands at distilling in one of the most theocratic, alcohol adverse states in the union. With little more than a will to learn and a love of working with their hands, they began experimenting with different techniques of distilling gin in small batches. The goal was simple- create a gin that they would love to drink, while keeping their ingredients as local as possible. After twenty or so attempts, Jackrabbit Gin was born. What they had crafted would soon become a staple of the Utah distilling scene, and the flagship product of an evolving brand that now boasts a well-rounded portfolio of spirits ranging from gin to whiskey, and from prohibition era canned cocktails to modern classics like the Paloma. More than a decade later, the job remains the same: make products that they enjoy themselves, and the rest will fall into place.
